I don't think you can technically call your farm organic without being certified, but I'm not 100% sure.
A farm I used to work on (not in TX) got in trouble for wearing shirts that said "eat organic" at the farmers market without being certified.

I'm curious to know which agency certifies these farms? There doesn't seem to be a listing on the database (https://organic.ams.usda.gov/Integrity/Default)?
According to NOP, if farms are not inspected, they can not claim to be organic and are subject to fines. (https://www.ams.usda.gov/about-ams/programs-offices/national-organic-program). The reason for this is to ensure that a national standard is met so all of us can have confidence in what we choose.
As a certified organic grower, I'm happy to share our experience with choosing a certifier and the inspection process. Feel free to call with any questions.

Our farm is situated in the middle of a fast growing housing development, with this being the second year of production on the farm. The farm has a small crew and this position includes playing a part in all aspects of our small diversified regenerative farm; seeding, transplanting, weeding, harvesting, washing, animal care, etc. Training will be provided for all tasks, however experience and passion are strongly preferred.
